Crispy French Fries

These homemade crispy fries are double-fried to perfection, with a secret ingredient—vinegar and baking soda in the boiling water—that gives them an extra crunch!

Ingredients
4 large russet Idaho potatoes (peeled and chopped)
1 tbsp vinegar (for boiling water)
1 tbsp baking soda (for boiling water)
Salt, to taste
Kosher sea salt (for sprinkling after frying)
Instructions
Prep the Potatoes: Peel and chop the potatoes into even strips. Rinse under cold water to remove excess starch.
Boil the Potatoes: In a large pot, bring water to a boil with salt, vinegar, and baking soda. Add the potato strips and cook for 6-8 minutes, until tender but not falling apart. Drain and let them dry completely.
Freeze the Potatoes: Lay the potatoes out in a single layer on parchment paper and freeze for at least 1 hour.
Par Fry the Potatoes: Heat oil to 300°F in a deep fryer or large pot. Fry the potatoes in batches for 4-5 minutes, until they are lightly browned. Remove and let them cool, then freeze again for 1 hour.
Final Fry: Heat the oil to 365°F. Fry the potatoes in batches for 3-5 minutes until golden brown and crispy. Sprinkle with kosher sea salt and serve immediately.
