Chili Roasted Jackfruit Tacos

These tacos feature jackfruit marinated in a flavorful chili mix, served with pickled onions and fresh cilantro for a delightful and satisfying plant-based meal.

Ingredients
For the "Pork":
2 cans young green jackfruit (drained and shredded)
1 tbsp olive oil
1 tbsp chili powder
1 tsp cumin
tsp smoked paprika
1/2 tsp cayenne pepper (adjust for heat)
1 tbsp lime juice
Salt and black pepper, to taste
1/2 cup pickled onions (or more for topping)
Fresh cilantro, for garnish
Cashew Queso (go to recipe)
For The Tacos:
8 small corn or flour tortillas
Instructions
Prepare the Jackfruit: Shred the jackfruit using your hands or a fork. In a bowl, toss it with olive oil, chili powder, cumin, smoked paprika, cayenne, lime juice, salt, and pepper. Let the jackfruit marinate for 20-30 minutes.
Cook the Jackfruit: Heat a skillet over medium heat and cook the seasoned jackfruit for 10-12 minutes, stirring occasionally, until tender and slightly crispy.
Assemble the Tacos: Warm the tortillas and fill them with the chili-roasted jackfruit. Top with pickled onions, cilantro, and a drizzle of cashew queso (optional).
Serve & Enjoy: Serve immediately and enjoy with your favorite sides!
