Crispy "Calamari"

King oyster mushrooms create the perfect crispy, tender “calamari” with this simple batter and deep-frying technique. A plant-based twist on a classic!

Ingredients
4 king oyster mushrooms (sliced into rings)
1/2 cup cornstarch
1/4 cup rice flour
1 tsp dried dill
1 tsp nori flakes
1 tsp oregano
1 tsp garlic powder
1 tsp onion powder
1 cup soda water (chilled)
1 tbsp caper juice
Salt, to taste
Instructions
Prepare the Mushrooms: Slice the king oyster mushrooms into rings, mimicking calamari. Set aside.
Make the Batter: In a bowl, whisk together cornstarch, rice flour, dried dill, nori flakes, oregano, garlic powder, and onion powder. Add soda water and caper juice to form a smooth batter.
Fry the "Calamari": Heat oil to 365°F in a deep fryer or large pot. Dip the mushroom rings into the batter and fry in batches for 2-3 minutes, or until golden brown. Drain on paper towels and season with salt.
Serve & Enjoy: Serve hot with your favorite dipping sauce and enjoy!
